Kitchendao Wire Cheese Slicer Review: Easy, Consistent Slices
Cutting slices from a block of cheese sounds simple, but getting them consistently thin and even with a regular kitchen knife can be surprisingly frustrating. Some pieces end up too thick, others taper down to almost nothing, and softer cheeses tend to stick to the blade.
The Kitchendao wire cheese slicer gives me a much easier way to portion a block of cheese. Its cutting wire passes cleanly through the cheese, while the measuring guides on the board help me keep the slices reasonably consistent.
It is a simple kitchen tool, but it solves one particular problem very well.
What I Like About It
The biggest advantage is how little effort it takes to make a clean slice. I place the cheese on the board, line it up using the measurement markings, and lower the handle. The wire cuts through without the sawing motion or downward force I would normally use with a knife.
That makes it particularly convenient when I need several slices for sandwiches, burgers, crackers, or a snack tray. Instead of eyeballing every cut individually, I can use the grid to help maintain a more consistent thickness.
It also makes sliced cheese look considerably neater. That may not matter for an ordinary sandwich, but it is useful when preparing a charcuterie board, cheese plate, or tray for guests.
Adjustable Wire Tension
A useful difference between this slicer and many basic models is the ability to adjust the wire tension. The screws allow the wire to be tightened if it begins feeling loose, helping it remain properly positioned for cutting.
Kitchendao describes this model as using a second-generation fixing system that holds the wire at three stress points. The manufacturer claims this provides 50% greater fixing strength than a conventional two-point design. I cannot independently verify that percentage, but the mounting system feels secure during normal use.
The slicer works well with many common block cheeses, including cheddar, Swiss, mozzarella, Colby, pepper jack, and similar varieties. The Amazon listing also recommends it for butter and soft handmade soap.
Very hard, aged cheese may require more pressure and could place additional stress on the wire, so I would avoid forcing it if a particular block does not cut easily.
Helpful Measuring Guides
The measurement grid is one of the features that makes this more useful than a basic wire cutter. It provides a visual reference for positioning the block and deciding how thick I want each slice.
The grid does not turn every slice into a laboratory-perfect measurement—you still have to position the cheese consistently—but it makes producing similar portions much easier than cutting completely freehand.
I can make thinner slices for sandwiches, thicker pieces for crackers, or relatively even cubes and strips for recipes. It also makes portioning a larger block feel quicker and more deliberate.
Replaceable Wire Design
Cutting wires eventually wear out or break, so I like that the wire on this model is replaceable. The quick-change mechanism is designed to let you install another wire without replacing the entire slicer.
Two spare wires are included, and they come in a small storage case. That is an important detail because loose replacement wires would be very easy to misplace in a kitchen drawer.
Kitchendao says the wire can be replaced in about a minute. The exact time will depend on how familiar you are with the mechanism, but the process is straightforward once you understand how the wire is secured and tensioned.
Including the replacement wires gives the slicer a much better chance of remaining useful over the long term.
Solid Stainless-Steel Construction
The cutting board and wire are made from stainless steel, giving the slicer a sturdy, substantial feel. At approximately 9.65 inches long, 8.5 inches wide, and 1.3 inches high, it provides enough working area for ordinary blocks of cheese without becoming excessively large.
The slicer weighs approximately 0.6 kilograms, or about 1.3 pounds. That added weight helps it feel stable on the counter rather than like a lightweight gadget that slides around every time the handle is lowered.
The stainless-steel surface also avoids the staining and odor absorption that can sometimes occur with wood or plastic cutting boards.
Easy Cleanup
The entire slicer is listed as dishwasher safe, which is especially helpful after working with softer or oilier cheeses.
For a quick cleanup, the smooth board can also be wiped or washed by hand with warm, soapy water. There are fewer grooves and crevices than you might expect, although I still pay attention to the area around the wire and hinge where small pieces of cheese can collect.
As with any stainless-steel kitchen item, drying it after washing helps prevent water spots and keeps it looking clean.

What Could Be Better
The slicer works best when the bottom of the cheese block is reasonably flat. An uneven or oddly shaped piece may tilt as the wire moves through it, making the resulting slice less consistent.
Although the measurement markings are helpful, the cheese still has to be positioned manually. There is no adjustable fence or stop that automatically holds every slice at an identical thickness.
The wire is also a replaceable wear item. Including two spares is a major advantage, but I would still avoid forcing the handle through an extremely hard or frozen block.
Finally, this is a specialized kitchen tool. It is not something everyone needs, and it will occupy more storage space than a handheld cheese plane. Its value depends on how frequently you buy and slice blocks of cheese.
My Verdict
The Kitchendao wire cheese slicer is one of those focused kitchen gadgets that earns its space by making a repetitive task noticeably easier.
It cuts through ordinary block cheese with less effort than a knife, the measurement grid helps produce more consistent portions, and the sturdy stainless-steel construction feels made for regular use. The adjustable tension and replaceable-wire system also address two of the biggest weaknesses found in cheaper wire slicers.
I especially like it for preparing sandwiches, burgers, snack trays, and charcuterie boards. It takes much of the guesswork out of slicing and produces cleaner-looking results with less effort.
If you regularly buy cheese by the block and want an easier way to create neat, consistently sized slices, the Kitchendao cheese slicer is a practical and thoughtfully designed kitchen find.
